What do you get when you cross science, sustainability, innovation, and a devotion to sushi? If you watched David Chang’s Hulu show The Next Thing You’ll Eat, you may already know the answer. Wildtype. The San Francisco-based company is growing salmon from cells in its lab with the goal of revolutionizing our food systems. Join co-founder Dr. Aryé Elfenbein, Wildtype scientist and cell biology co-lead Taeryn Kim, and KCRW Good Food producer Elina Shatkin to talk about the future of food.
